Ingredients
- 2 medium zucchini
- 4 strips bacon, chopped
- 2 large eggs
- 1/2 cup grated parmesan
- 2 cloves garlic, minced
- Lots of black pepper
Method

Spiralize zucchini into thick noodles. Salt lightly and let drain 5 min, then pat dry.

Cook chopped bacon in a skillet until crisp. Remove, leaving fat in pan.

Whisk eggs with grated parmesan and lots of black pepper.

Add zucchini to the bacon fat. Toss 2 min until just tender.

Off heat, pour in egg mixture and toss continuously until silky. Stir in bacon. Serve immediately.
