Ingredients
- 1.5 cups shredded mozzarella
- 2 oz cream cheese
- 3/4 cup almond flour
- 1 large egg
- 1/2 cup tomato sauce (no sugar)
- 2 oz pepperoni
- 1/4 cup extra mozzarella for topping
Method

Microwave mozzarella and cream cheese together 1 min until melted. Stir.

Mix in almond flour and a beaten egg until a dough forms. Knead briefly.

Pinch off walnut-sized pieces, flatten on parchment. Top each with a teaspoon of tomato sauce, a slice of pepperoni, and a pinch of mozzarella.

Bake at 220°C / 425°F for 12–15 min until golden and bubbly.
