Ingredients

  • 4 salmon fillets (5 oz each)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/3 cup grated parmesan
  • 3 cups fresh spinach
  • 1 tsp italian seasoning

Method

    Season salmon fillets. Sear skin-side up in olive oil 4 min, flip, 3 more min. Remove.

    In the same pan, soften garlic in butter. Add heavy cream, parmesan, and a pinch of italian seasoning.

    Stir in spinach until wilted. Return salmon to pan, spoon sauce over. Simmer 2 minutes.
