- 1 large avocado, halved & pitted
- 2 large eggs
- Salt, pepper, smoked paprika
Method

Preheat oven to 220°C / 425°F.

Halve avocado, remove pit. Scoop a little extra to fit a whole egg.

Place avocados in a small baking dish so they sit upright.

Crack an egg into each cavity. Season with salt, pepper, paprika.
